Bayfield - Goose & Gander Brewhouse


Bayfield’s dining scene is about to welcome a distinguished new member as Herb Marshall, the owner behind Goderich’s popular Park House and Beach Street Station, prepares to open the Goose & Gander Brewhouse. This new venture is a true family affair, with Marshall’s business-graduate sons taking the lead across the portfolio; while one manages Beach Street Station and the other oversees the Park House, both are lending their expertise to ensure the success of this latest Bayfield destination. While Herb had initially aimed for a May opening, the community had to wait until June to finally welcome the newest addition to Bayfield’s Main Street.

 

For Marshall, a restaurant is defined by its location and the experience it offers. He believes the west coast of Lake Huron has become a premier destination that keeps visitors coming back, and he has positioned the Goose & Gander Brewhouse to reward those who travel the extra miles to find it. His philosophy focuses on "good dining" rather than "fine dining," aiming for a comfortable middle ground with a menu that changes frequently to reflect seasonal demands and guest preferences. Plans are also in motion to extend the operating season based on local demand.

 

The inspiration for the brewhouse’s unique interior dates back to a trip Marshall and his wife took to Edinburgh, Scotland. Charmed by the historic, warm atmosphere of the pubs lining the road to Edinburgh Castle, Marshall sought to recreate that timeless feel in Bayfield. To achieve this, he commissioned a Stratford craftsman to build a magnificent 41-foot U-shaped bar, modeled after a centuries-old pub bar he admired abroad. This commitment to authenticity extends to the decor; Marshall has already secured a hand-crafted statue of the first king of Scotland, which will stand stately watch over the back patio to ensure the legendary pub atmosphere remains as intended for years to come.
